Let me know how it goes. My experience, you need to cook the shit out of it to make it edible. Only ever had any success (?) in a slow-cook bolognese.

My understanding is that there’s a HUGE difference between cooking a sow and a boar. We’ll see.

I’ve seen it half a dozen times now.  It’s a top 10 movie for me (maybe top 5).

  • 1 tbsp bacon grease
  • 2 bunches green onions
  • 1 medium onion, fine dice
  • 5 cloves garlic, fine dice
  • 1 cup dark brown sugar
  • 6 oz tomato paste
  • 1 cup ketchup
  • 2/3 cup dijon mustard
  • 2/3 cup water
  • 1/3 cup apple juice
  • 1/2 cup apple cider vinegar
  • 1/2 cup Worcestershire sauce
  • 1/2 cup drippings from the ribs
  • 1/2 tbsp Ancho chili powder
  • 1 tbsp cumin
  • 1 cup Bulleit (or other bourbon)
