Ugh. Why? The pine tree taste is the reason I avoid gin in the first place.
I can’t think of many spices I love more than juniper.
I add to it anything I can (sausages and game bird cures always get better with a little juniper).
New Amsterdam is my daily gin, but I’d like one every once in a while that’s got a piney bite to it.
