Have you ever done a whole pig head roast?

Not a roast, no. The only experience I have with pig heads is head cheese. I’ve got a split head in the freezer, though, and I’ve been thinking about doing guanciale with the jowls. ¬†Maybe I’ll roast half, though. Have you ever done it? ¬†How did it turn out?
