I made 4 pizzas:
- pork belly sausage, cherry tomato jam and mozzarella
- salsa di rucola, chanterelle mushroom, serrano ham, roasted pickled brussels sprouts, mozzarella and pecorino gran cru with balsamic reduction
- fennel and ricotta base, prosciutto, basil, garlic, mozzarella and fiore di sardegna
- another pork belly sausage, cherry tomato jam and mozzarella, but with basil, bacon lardons and pecorino romano as well
The white pizza was new for me, and I loved it- for the base I took 1 small bulb of fennel, diced it up and ran it through the food processor with 1/2 cup of ricotta and 1 tsp black pepper. It was pretty great.
