How to you get the meat into the sausage casing? I've seen a few different devices that do it, but I've also heard you can do it by hand, although it's extremely difficult.
Yeah, I saw some dude do it by hand on No Reservations, in Greece or something. That shit looked impossible.
The sausage stuffer attachment on the Kitchenaid is useless. It forces too much air into the casings. I use the 3lb heavy duty stuffer from Cabelas, which is fine for now, but I’d really like to get a vertical stuffer, because it allows you to keep constant pressure and fits more sausage.
